Chef Petrus
In 1996 his chef’s journey started when he studied Hotel Operations and Management at the Institute of Hotel and Tourism Management (Belviourpark) in Mafikeng. His love for people, food and inspiring places led him to lead the way in the kitchen at exclusive lodges, where his skill and talent could further be refined and nurtured. At exclusive and renowned lodges such as Londolozi Private Game Lodges, Imbali Game Lodge, Makalali Private Game Lodge & Entabeni Game Reserve, Chef Petrus gained a wealth of knowledge concerning quality, attention to detail and true African hospitality.
He held the position of executive chef for all these brands, where in some cases the portfolio consisted of three to five lodges.
After mastering his skills in this area, he decided to test the waters abroad & broaden his chef’s knowledge & framework in New Zealand. Here he worked as head chef for three different restaurants before accepting a position at Royal Caribbean Cruises (USA) which accommodated between 3800 & 5700 guests per cruise.
The highlight of his career was when he was afforded the opportunity to hold a position as Senior Sous Chef on Princess Cruises’ WORLD CRUISE which embarked from Sydney with 3800 passengers travelling to all continents of the world. On this cruise regional menus were created to complement the applicable continent i.e. Asian, Mediterranean, Caribbean, Pacific, English, South American, etc.
His love for the hospitality industry has never stopped at his own career & ambition. He has been involved with SACA Young Chefs Programme at TVETS Colleges as a Mentor for several years where he is been able to share invaluable expertise & knowledge to the next generation.
Chef Petrus is currently the Group Executive Chef of Legend Hospitality Group and is looking forward to his journey of teaching & transferring his knowledge to the students of Legend Hospitality School.
